The Magic of Oaxacan Cuisine: Puerto Escondido Cooking Class

It was just another day in paradise as I set foot in Puerto Escondido, the breathtaking coastal city of Oaxaca, Mexico. Long famous for its surf breaks and sunny beaches, I was ready to dive into a new culinary adventure.

I had always felt that Oaxacan flavours held unexplored mysteries and subtle delicacies ready to enchant the foodie in me. The Puerto Escondido culinary course came highly recommended and seemed like the perfect opportunity to delve into the local culture and gastronomy.

As I signed up for the class, I was filled with anticipation and excitement. The vibrant marketplace, local vendors sharing their food stories, and the tantalising aroma of spices filled the air, setting the perfect culinary stage.

Oaxacan Cuisine: A Taste Adventure in Mexican Cooking Techniques

Every recipe shared by our skilled instructors showcased the diversity of Oaxacan cuisine. The day kicked off with preparation of a traditional Oaxacan mole sauce in Puerto Escondido. The ingredients – a blend of chilies, seeds, and chocolate – left us in awe with its intricate blend of sweetness, heat, and depth of flavour.

It hit me then – there’s an entire universe within Mexican cooking, especially the Oaxacan recipes. Each dish had a colourful story etched within its flavours and textures.

Experiencing the Authentic Flavours

We were introduced to a variety of local Puerto Escondido dishes during the class. From using various chilies in ceviche to making tortillas from scratch and using pepita (pumpkin seeds) in ways I’d never imagined, it was an enlightening journey.

One thing we learned early on: no Oaxacan food is complete without a dash of lime. I was mesmerized by the use of indigenous ingredients, the fragrant herbs, the smoky flavours and the sheer freshness in every bite.

Learning the Oaxacan cuisine magic under skilful chefs

No, this was no ordinary cooking lesson. Each of our mentors were not just skilled chefs but passionate about every dish they taught us. They shared anecdotes, teased us about our clumsy tortilla flips, and encouraged us when we made our first homemade Oaxacan moles.

By the end of the cooking class in Puerto Escondido, each of us were proudly sharing our dishes, each brimming with authentic Oaxacan flavours. The class wasn’t merely about learning to cook; it was an immersive experience, a peek into the culture of Puerto Escondido.

Lessons from the Puerto Escondido Food Journey

Today, I run my fingers across the recipes we made in class, secured as precious souvenirs. It wasn’t just about the food – it was about the people, the exchanges, the smiles, and those secret Oaxacan cooking tips!
